If you are not adding enough water to bind the flour to the ladies finger, the fries will come out so white and wont turn golden while frying and it spoils the oil(the flour). Aloo Bhindi fry is an easy subzi recipe that I want to try for a long time. I checked with my friend Sangeeta quickly for the recipe, it was super easy and tasty too.

Instructions to make Baby Lady Fingers fry:
  1. Pour oil in a pan. When oil become hot, take it out in a bowl and use it afterwards.
  2. Now add lady fingers and fry it in a low flame. When they become crunchy, take it out in a bowl.
  3. Now pour same oil in a pan, add Urad daal, kalonji, Rai, Methi dana, cumin seeds and Curry patta.
  4. When Urad daal changed it colour from white to red then add crushed red chillies, salt, green chillies, little bit of water and bhonofy it.
  5. Now add lady fingers, lemon juice and bhonofy it in a low flame till oil comes out.
  6. Dish it out, sprinkle Chaat Masala and few drops of lemon juice.
  7. Serve it hot with chapatis.

My family loved it a lot, that Aj wanted to eat it for dinner as well after eating it for lunch. When we went to Pune, where ever we had lunch we ordered for bhindi fry (sukka). Once the batter is done, dip the boiled baby corns in it and coat them well. Meanwhile, take a skillet and heat oil in it over medium flame. When the oil is hot enough, add the coated baby corns in the skillet and shallow fry them until golden brown in colour.
