- Mix one part Soya mince to 3 parts boiling water and let stand. After 5 minutes, drain.
- Fry Mushrooms in Olive Oil while you wait.
- After water has evaporated from the Mushrooms, add Garlic and Italian Seasoning. Fry a further minute or two.
- Add Soya Mince to the pan. Cook until excess water has evaporated.
- Serve in a bowl with the cooked Spaghetti. Top with The Feta, thyme, lemon juice and a dash more olive oil. Enjoy!
