- Take 1 tsp oil in a pan. Add all whole spices. Roast them on low flame for 1 min. Turn the gas off. Let them come to room temperature. Grind to a fine powder.
- Chop tomatoes and onions roughly. Grind them to a smooth paste.
- Wash bhindi. Remove crown and make a slit.
- Take rest oil in a pan. Add asafoetida. Add bhindi. Saute on medium flame until cooked. Take out in a separate dish.
- Now add tomato and onion puree in a pan. Add salt and saute. Saute until water is evaporated and oil starts to separate. Add in bhindi and mix well.
- Add ground powder and aamchur powder. Mix well. Add 1/2 cup water. Mix well and let it simmer for 2 mins.
- Aachari Bhindi is ready. Serve with salad and chapati.
