The ingredients needed to make Vendaikai Poriyal / Ladies Finger Fry:
- Make ready 1/2 kg Ladies Finger
- Prepare Oil - as required
- Make ready 1/4 tsp Mustard seeds
- Make ready 1/4 tsp Bengal Gram Dal
- Get 1/4 tsp Urad Dal
- Take 1 Medium size Onions finely chopped
- Take Curry leaves - few
- Get 1/4 tsp Turmeric powder
- Prepare 1 Tbsp Sambar powder
- Take Salt - as per your taste
Add a few drop of lemon juice while cooking lady's finger for crispy bhindi fry. Vendakkai poriyal or bhindi stir fry with step by step photos and video is not only tasty but a healthy dish as well. Vendakkai is ladies finger or the okra in Tamil. It is also known as Bhindi in Hindi.
Steps to make Vendaikai Poriyal / Ladies Finger Fry:
- Wash and cut the ladies finger into thin rounds of 0.25 to 0.5 inch.
- Place a sautepan in the stove. Add 2 Tbsp oil. Once oil gets heat, add mustard seeds and fry it.
- Then add bengal gram dal and urad dal. Fry till light brown colour.
- Add onions and curry leaves. Saute until onions becomes translucent. Keep the flame low.
- Then add the ladies finger and stir well for 5 mins in low flame.
- Add salt and some oil, stir well. Don't cover with lid.
- Keep on stirring in the intervals of 2 or 3 mins by adding little by little oil gradually.
- Once the stickiness goes off add sambar powder and little oil, stir well. Cook the ladies finger uniformly for another 5 to 10 mins by stirring gradually. (Atlast you can also add 1 tsp of curd and stir well to make it little crispy).
- Once it's cooked switch off the flame, transfer to a bowl.
- Serve as a Sidedish for your any of your rice varieties.
- You can also mix this to hot rice topped with some ghee. It tastes awesome.
There are as many ways to make this amazing and tasty vegetable as there must be homes in India. I love lady finger, but some people avoid due to its slimy nature. Fry this on high heat till the curd evaporates and the lady finger gets nicely browned. And I was making my daughter eat the vendakkai poriyal saying its good for brains and I showed her this post to reinforce my opinion. Ladies finger / Okra done the right way can be delicious.
