Add string beans or even squash if you want, but the ampalaya, okra and eggplants are your required vegetables for an authentic Pinakbet. If you have fried fish or pork leftovers from the day before, you can use them as long as they're not seasoned with overpowering flavors like chili or anise or sesame oil.

Instructions to make Pinakbet:
  1. Wash and prepare meat and vegetables; longitudinal for meat, eggplant and bitter gourd, cubed for squash, cut in half for okra and tomatoes.
  2. Arrange ingredients in the pan (pan should be narrow with cover) following this order from bottom to top (in the bottom are ginger, garlic and onions, followed by meat, then squash, okra, bittergourd long chilli and eggplant at the top most part)
  3. Pour in 4-6 tbsp of anchovy (fish sauce) and 100 ml of water. Close and simmer in low heat for 20-25 mins.
  4. The vegetables should be thoroughly cooked, add salt to season (optional). Simmer again for 3-5 mins.
