- Cook rice with the vegetable stock or the maggi cubes until firm.
- Use some salt in it while cooking according to taste.
- Also add whole spices to it along with half of the chopped coriander.
- In a cooking pot, heat ghee and saute the sliced onions.
- Add the bay leaves too.
- After the onions get sauteed to a nice golden colour, add the chilli flakes.
- Followed by the garam masala and the cumin powder.
- Now add the veggies and saute these all for 5 to 6 minutes.
- Finally add the mango cubes.
- Cover and cook for 2 minutes.
- Now add the cooked rice and mix gently. Fluff up the rice using a fork and adjust salt at this point.
